Oh man, the carbs. But oh man, the taste. It's the ultimate comfort food for me.

Ingredients:
-One can (10.5 oz) Cream of Mushroom Soup
-One container (16oz) Sour Cream
-One sack (32oz) frozen Southern-style Homefries (they're shaped like little cubes, and usually OreIda brand), thawed
-2c grated cheddar
-1/2c chopped onions
-1.5 lb chicken, diced
-1/2tsp pepper
-1/2tsp salt

Throw everything together into a foil-covered 13x9, bake at 375 for at least an hour (depending on how brown you want it) and serve.

It's so good.

So, for May Day, I decided to throw together one of my favorite things ever, a super-rich carrot cake. And, remembering that I promised to photoblog it for a few people, I did just that.

I like to leave this cake naked (even though decorating is usually my favorite step), but simplest is best with this one. Taste it and you'll see why. It's more than enough on its own; between the frosting and rich cake, anything else would be lost. It's also really good refrigerated, because then the frosting tends to take on an ice-cream like consistency. =)

I can't wait to eat it. It's taunting me in my fridge, but oh! can I be patient.

Mooncakes!

This is also known as Haz's Chinese Baking Adventure.
My first time through, it took me forever (I mean over seven hours) to go through the whole process. I thought Project Mooncakes was doomed, but I stuck it out and improvised. I even had enough leftover filling to go through it for a second run, which was much faster.
WARNING: Even though I've cut hours off of the process, you should plan to have at least six hours to blow when going through this your first time.
That being said, I've included the "haz ways" of doing things, which usually differ greatly from the original recipe.

They're really tasty. And rewarding after all that hard work. You'll probably end up with extra azuki paste, and if so, try making cookies or other pastries with it. I just made more moon cakes. xD

Wontons!

So, seeing as it was the Chinese new year and we had no clementines or azuki beans, I decided to look up some other new year's foods and make something last night. One such food on the list was wontons, and seeing how [livejournal.com profile] elenuial and I had gyoza wrappers and chicken to use, I thought I'd alter a few recipes and make my own wontons. They came out very tasty indeed, so I thought I'd share. As usual, recipe is illustrated.
